not so much with the pagan/viking metal...trust me i love that stuff...like...a lot.... but for the fantasy/medieval atmosphere the best stuff is just acoustic medieval/celtic style music like "Blackmore's Night", "The Medieval Baebes", and even stuff like "Loreena KcKennitt" i can dig up more if you like Ben, for suggesions.
